Given Asari and Krogan longevity, and that other sentient races probably had still and video cameras too, Shepard had seen a Quarian image long berfore his intimate encounter with Tali. So Shepard learned about Quarians, the Morning War, the Rachni war, the Krogan Rebellions, and all that stuff in high school history class. The Council established the human embassy on the citadel in 2165, when Shepard was 11 years old. Asari live for 1,000 years, and the Morning War took place almost 300 years before the events in Mass Effect. One Asari specifically says she (and therefore the Asari in general) remember what Quarians look like outside the suit, because she's old enough. Several times Asari say they know what Quarians look like. What he was seeing for the first time was Tali herself.
Shepard already knew what Quarians looked like when he removed Tali's mask.
